Mămăligă is a porridge made out of yellow maize flour, traditional in Romania and Moldova. It is similar to the Italian polenta but has a harder texture. Historically a peasant food, it was often used as a substitute for bread or even as a staple food in the poor rural areas. However, in the last decades it has emerged as an upscale dish available in the finest restaurants and it's served as a side dish for grilled meat, cheese, stuffed cabbage and even sour soup.

Mamaliga est une bouillie faite de farine de maïs jaune, traditionnelle en Roumanie et en Moldavie. Il est similaire à la polenta italienne mais a une texture plus difficile. Historiquement une nourriture de paysan, il était souvent utilisé comme un substitut pour le pain ou même comme un aliment de base dans les zones rurales pauvres. Cependant, au cours des décennies il a émergé comme un plat haut de gamme disponible dans les grands restaurants et il est servi comme plat d'accompagnement pour les viandes grillées, fromage, choux farcis et soupe aigre même.
